Chocolate Peanut Butter Protein Bites

Hangry: state of mind (hungry + angry) that occurs sometimes after work but before dinner. If a bag of baked cheddar n’ sour cream potato chips are around, they are instantly an endangered species.

For this, and because I have been meaning to make them for a while, I made some protein bites! I only need a one or two to keep me from eating a whole bag of potato chips.

Ricotta Chocolate Mousse

To apologize for my long hiatus I thought I would post a simple, amazing dessert.

I really did try new recipes for the blog in the last several months…but they all turned out slightly disastrous. One notable one in my mind was when I had made a tasty homemade spaghetti sauce but it used all my kitchen utensils and it was super messy. Not something that I thought people would enjoy putting their kitchen through. With all the others, they just never quite made the cut. Not healthy enough, not simple enough.

I finally simplified a bit and found a really quick, cool, chocolatey dessert that is great for hot summer days.

Banana and Raspberry Ice Cream

“Do you want some fries with your ketchup?” You may have heard a friend ask you something like this, and he or she is most likely pointing out the absurd ratio of ketchup to fries you currently have. (no judgement here). My husband and I ask ourselves if we want something else with our dark chocolate pieces we sometimes eat for dessert. And usually the answer is, naahhh.

But I’ve heard of this banana ice cream that just consists of….well, BANANAS! I thought I had to try it with my dark chocolate chunks. The banana ice cream worked out so well that I started feeling a little confident and made some banana and raspberry ice cream as well. I’m not going to lie, I felt like a mad scientist with this recipe. Experimentation= success!

Chicken with Mango Salsa

If you ask my mother-in-law what I like to eat for dinner, she’ll tell you chicken is not always my favorite protein. I used to be a liiiiiitle picky and there were a few times I would (hopefully, subtly and politely) opt out of the chicken for a PB & J sandwich. She still makes fun of me till this day, and rightfully so.

This recipe is an easy way to add flavor to chicken [not that my my mother-in-law’s chicken wasn’t flavorful 😉 ] In this recipe you’ll find a sweet and spicy mango salsa paired with juicy chicken! Clean up your drool and start cooking!
