Baked Tilapia with an Avocado and Tomato Salad

Spring is here!

With spring comes the SUN but also a craving for some light, moist fish and bright red, juicy cherry tomatoes! Well, at least for me. 😉

This quick meal is great for a Sunday afternoon when your chore list includes: 5 loads of laundry, cleaning the car after a long winter, and picking up some groceries. This has been Erica-tested-Erica-approved.

I Do Not Like Salads

I do not like salads. Most of the time, I can barely find one that I like. It’s really not that it doesn’t taste good, I just enjoy a balanced bite of food and eating a salad is hard work! 🙂 With salads, I can’t get all the ingredients in one bite and the cheese and thin stringy carrot parts are left at the bottom of the bowl. They look at you and say “Don’t leave me behind!!” You end up having to scoop them onto your fork with you fingers to eat them; I might as well eat my salad with my hands. Don’t tempt me haha I have no shame, I will do it! 😉

BUT…lo and behold I did find a salad I like!

Work {Out} in Chicago

Last week I had a conference in Chicago for work and I was excited to visit the Windy City. The only bad thing about traveling for work or even going back to your hometown or on a vacation for a few days, it can throw you out of your routine. Cooking is out of the question, your schedule is typically completely different, you’re in a different time zone,  and overall, you sometimes don’t feel like working out. I’ve done a better job of disciplining myself to make sure to eat right when I eat out and doing a workout no matter where I am.

I, of course, love my sleep. Wednesday I had to catch up on sleep since I had to get up early for the flight to Chicago on Tuesday. Thursday and Friday morning I was able to get a good work out in with my colleague, Caitlin. Out hotel was close to the Lake Michigan and of COURSE that’s what I wanted my view to be while we worked out.

Rotisserie Chicken Wrap with Avocado Spread

Mindy, one of my best friends, and I had this plan to go to Highbanks Park on Sunday to hike, play, and picnic with Cohen, her 2 1/2 year old son, …but the weather had something else to say about that. (silly rain and lightning) So we brought the picnic inside!!

The goal was to gather healthy food that was easy to pack and eat. This also happens to be easy to to prepare! I had a sugar craving and  decided to make a BANANA PUDDING DESSERT! (yeaaaa buddy!)

I honestly forgot to take some final pictures of some of the food for this blog; we were so hungry we started eating things before we got pictures! We also forgot to cut up the tomato to put it in the wrap…we were delusional with hunger haha It was SO good!

Vegetarian Adventure: Welcome Home Lunch with the Sis!

Emily is my younger sister and mini twin. People still get us mixed up: soccer coaches, neighbors, teachers. Even random people call me Emily and I KNOW they don’t know I have a sister called Emily, so I’m pretty sure they are psychic. Both of us never used to think we looked that much alike, but as we’ve grown up we can see why we sometimes confuse people. Look at those little nuggets below! We are pretty much adorbs!
