Ricotta Chocolate Mousse

To apologize for my long hiatus I thought I would post a simple, amazing dessert.

I really did try new recipes for the blog in the last several months…but they all turned out slightly disastrous. One notable one in my mind was when I had made a tasty homemade spaghetti sauce but it used all my kitchen utensils and it was super messy. Not something that I thought people would enjoy putting their kitchen through. With all the others, they just never quite made the cut. Not healthy enough, not simple enough.

I finally simplified a bit and found a really quick, cool, chocolatey dessert that is great for hot summer days.

Banana and Raspberry Ice Cream

“Do you want some fries with your ketchup?” You may have heard a friend ask you something like this, and he or she is most likely pointing out the absurd ratio of ketchup to fries you currently have. (no judgement here). My husband and I ask ourselves if we want something else with our dark chocolate pieces we sometimes eat for dessert. And usually the answer is, naahhh.

But I’ve heard of this banana ice cream that just consists of….well, BANANAS! I thought I had to try it with my dark chocolate chunks. The banana ice cream worked out so well that I started feeling a little confident and made some banana and raspberry ice cream as well. I’m not going to lie, I felt like a mad scientist with this recipe. Experimentation= success!

Sweet Potato & Brussel Sprout Hash

Oh veggies…you are so hard to get enough of.

Since it’s hard to get the veggies our bodies need, I try to make a big pan full of veggies once a week. One of my recent favorites is a Sweet Potato & Brussel Sprout Hash. I never really cooked with brussel sprouts before but they are great when paired with something sweet like the lovely sweet potato. The sugary flavor, soft texture of the sweet potatoes balance the earthy, crunchy flavor of the brussel sprouts. I’m so in love that I make this once a week!

Turkey Sausage: All the scrumptious taste without the artery clogging properties!

Turkey sausage + eggs + avocado + broccoli + cheese + english muffin + coffee/tea + banana = the Breakfast BOSS

I love me some sausage (redneck accent). I really do. There is something about the juicy, spicy, and fatty part of it all the just makes your mouth water. I always kick myself after indulging in something really fatty (bad fat) but…my friends….(drumroll)…..I found away around that guilt!!! I introduce you to homemade turkey sausage!

Rotisserie Chicken Wrap with Avocado Spread

Mindy, one of my best friends, and I had this plan to go to Highbanks Park on Sunday to hike, play, and picnic with Cohen, her 2 1/2 year old son, …but the weather had something else to say about that. (silly rain and lightning) So we brought the picnic inside!!

The goal was to gather healthy food that was easy to pack and eat. This also happens to be easy to to prepare! I had a sugar craving and  decided to make a BANANA PUDDING DESSERT! (yeaaaa buddy!)

I honestly forgot to take some final pictures of some of the food for this blog; we were so hungry we started eating things before we got pictures! We also forgot to cut up the tomato to put it in the wrap…we were delusional with hunger haha It was SO good!

Making Exercise a Priority: Bodyweight Workout at Home



I hope you forgive me for not posting a workout last week, there is this thing called “searching for our first home” that is super fun but you have to put in the time to find a great place. It was one of those weeks where I felt I was just squeezing everything I had to do in a very short amount of time. I used to say, “I just didn’t have any time to workout last week”, “OMG, last week was so crazy I just didn’t have the energy”, etc blah blah blah.  I’ve slowly realized I was just making excuses and allowed the stress I felt to make me think I didn’t have enough time. Stress was something I had to learn to manage. During those busy weeks that we all have, we just need to make working out a priority, which really means making ourselves a priority. There is always time for that.
